Apple Breakfast Muffins

Breakfast can be a tricky affair. Some can eat a full English in the morning; others can only eat something during lunch. Some would love to eat but don't have the time, so they resort to a breakfast bar, biscuits, or sugary cereals.

For most of my students, this is the most challenging meal of the day.



What does Ayurveda say about breakfast?


Ayurveda does not necessarily recommend everyone have breakfast.

If you have a Vata constitution, you indeed should have breakfast.

Pitta constitution also needs to feed the fire; otherwise, they can get hangry, irritated and unfocused.

Kapha constitution can do without breakfast easily.

But what to eat?


If you prefer a sweet taste in the morning, there are other options for the overly sugary, shop-bought breakfast cereals.

Here is one, particularly for autumn and winter.



Apple breakfast muffins

They are great for using fallen apples, which tend to sit in the fruit bowl for weeks.

Apart from being very tasty, they are also healthy.

Apples are sweet, and the taste for the cold months is nourishing.

Dates are sweet and nourishing.

Spelt flour is a more ancient variety of the over-hybridised modern wheat and is easier to digest. It is also nourishing and sweet in taste. With its higher protein content, it helps to build during the Vata period.

Oats are sweet and nourishing; their slimy qualities keep the body hydrated.

Cinnamon and cardamom help digest food and are perfect Vata spices, with cinnamon's warming qualities and cardamom's relaxing qualities.

The dates and maple syrup add sweetness without using refined sugar.

This makes the muffins nourishing, light to digest, and slow-releasing breakfast.
